How Shaved Ice Took Over the Dessert Menu

Whether you know it as Japanese kakigori, Korean patbingsu, Hawaiian shave ice, Italian granita, Indian ice gola or the American snow cone, a mound of shaved ice drenched in syrup and served on a hot day is a near-universal delight. “It’s like the dumpling of the dessert world,” says Maya Erickson, 32, the pastry chef at the Thai restaurant Phuket Cafe in Portland, Ore.

Now, though, the once-casual treat has made its way to restaurants, even fine dining. Erickson serves kiwi-flavored shaved ice atop a creamy jasmine tea custard. At Bar Maze , which offers a cocktail-paired tasting menu in Honolulu, the head chef Ki Chung, 32, combines sweet corn pudding and sesame streusel with ice shaved from the same clear blocks used for drinks — the dessert is finished tableside with a pour of black sesame orgeat. While Chung’s ice is rendered as light and ethereal as snowflakes, at Vern’s in Charleston, S.C., the chef and co-owner Dano Heinze, 40, favors a crunchy texture. In a shallow sundae glass, he creates a parfait of vanilla ice cream spiked with orange zest, a layer of orange jam, tangy crème fraîche whipped cream and a pile of orange granita — frozen orange juice sharpened with citrus vinegar and scraped with a fork — for a take on an orange Creamsicle. For Srijith Gopinathan, 46, the chef and owner of Copra in San Francisco, shaved ice is infused with nostalgia. Recalling the crushed ice of his childhood, molded into ice pops and sold by bicycle vendors in Kerala, India, his coconut crystals — coconut water, coconut milk and a touch of cardamom, all blended with liquid nitrogen — are embedded with mango gelée and candied basmati rice puffs. And at Yess in Los Angeles, the sous-chef Giles Clark, 36, creates what he calls “slightly naughty, adult interpretations” of kakigori, including a sangria version with a fruit salad that might include passion fruit and pluots, heaped with ice shaved by a hand-cranked machine and doused in red wine syrup sweetened by the ferment of fruit trimmings. Part of the fun is the dramatic dimensions of the dessert, about the size of a volleyball. “It’s quite playful,” Clark says, adding, “People finish with a smile.” — Martha Cheng

A Jeweler’s Homage to the Owl

The owl, a strange, distinctive predator, is one of the few birds that hunts in the dark. Over the centuries and across cultures, it’s symbolized everything from sagacity to black magic. The armed Greek goddess Athena was frequently depicted with a so-called little owl — Athene noctua — by her side, and the 19th-century German thinker Georg Wilhelm Friedrich Hegel cast the bird as a metaphor for philosophy itself: Its emergence each night meant that reality, he wrote, had “completed its formative process” so that thought could take flight. Recently, a private client asked the New York-based jeweler Monica Rich Kosann to capture the owl’s enduring allure in a ring. The result: this giant black Australian opal set high in 18-karat gold, surrounded by marquise-cut diamonds, a totem at once wicked and wise. Houseplants Merge With Sculptures at the Future Perfect in Los Angeles

At the Goldwyn House, the 1916 neo-Classical Hollywood Hills estate that’s now the Los Angeles outpost of the design gallery the Future Perfect, even the houseplants are contemporary collectibles. Monsteras hang from wires, sprouting out of flying-saucer-shaped mounds of soil; ficus and elephant trees seem to be in the process of escaping the structures that house them, their root systems spilling out of Brutalist bowls or straddling found-concrete platforms.

These exuberant botanicals are in fact sculptures by the Venezuelan-born, Los Angeles-based artist Alejandro Bataille, 34, who studied product and furniture design before joining the gallery as a sales director in 2021. Bataille’s creative awakening, like so many others, happened during the pandemic, when he had plenty of time — and an unexpected catalyst — to indulge his longtime bonsai hobby. “I had a tree I’d been taking care of for 10 years, and my dog ate it in 10 minutes,” he recalls. “That’s when I decided to start experimenting.” Drawing upon memories of his childhood in Caracas — where tropical blooms sprout from sidewalk cracks and buried tree roots push pavement upward to form what he calls “nature-made speed bumps” — Bataille began to play with a number of Japanese techniques, most notably constructing kokedama , or moss balls, by removing plants from their pots, packing their roots in soil and then wrapping the dirt clods in moss and twine. Typically, they’re spherical, but Bataille made his into amorphous and unexpected forms, mounting them in and atop found industrial materials like craggy chunks of cement and automotive parts. “I wanted to showcase a sense of struggle, survivalism, resilience,” he says.

The living portions of his sculptures are of necessity portable, since collectors must remove the plants from their bases for weekly soaks. None have died so far but, says Bataille, living with his artwork is “definitely a relationship — a way to care for nature consciously and put it in a more precious place.” — Eviana Hartman

Victoria Beckham Collaborates With Breitling on a Colorful Watch

When Breitling, the Swiss watchmaker long known for creating technically advanced timepieces — the kinds used by pilots, deep-sea divers, even astronauts — celebrated its centennial in 1984, it introduced the Chronomat, the company’s first chronograph wristwatch specifically intended for everyday, terrestrial use. It was a simplified, more polished version of the other models but with the same mechanical artistry and two notable new features: tiny brackets that gripped the bezel at the 15-minute marks, easily transforming the instrument into an elegant stopwatch; and Breitling’s now-signature Rouleaux bracelet, which resembled a loaded bandoleer.

For its latest incarnation of the Chronomat, Breitling has turned to the British women’s wear designer Victoria Beckham to create a more feminine iteration of the classic form. Echoing the palette of Beckham’s spring 2024 collection, the new Chronomats feature dials in shades like deep midnight blue, delicate dove gray or jade green, contrasted against stainless steel or 18-karat yellow gold. Like Breitling’s other limited-edition watches, each is engraved with a reminder: There are just 400 of the stainless-steel style, and 100 of the gold. A Ceramic-Tile Chair Channeling the 8-Bit Era

In the making of ceramics, color normally gets added toward the end. A vitreous glaze, composed largely of silica, can be brushed on neutral-hued clay, with which it fuses in the kiln, becoming an impervious, sometimes unexpected, often beautiful coating. But for the Bushwick, Brooklyn-based designer Cody Hoyt , 43, who creates vessels, furniture and wall pieces, his artistic process begins with vibrant pigments, typically dozens of them. Using a variation of a Japanese method called nerikomi , Hoyt tints white clay with powdered stains, then extrudes them into bars of varying thickness that he cuts and manipulates to create marbled tableaus, and geometries that recall those of M.C. Escher. His one-off pieces include this chair, constructed from handmade, sandblasted matte tiles applied to a simple wooden frame. Olympic skater stripped of gold medal tried to blame her doping ban on grandfather's strawberry dessert, court says

Lawyers for Russian figure skater Kamila Valieva claimed that a strawberry dessert contaminated by her grandfather's heart medication may have caused her to test positive on a doping test, but the sport's highest court rejected the explanation and banned her from the sport for four years. 

The Court of Arbitration for Sport published their  129-page detailed ruling  on Wednesday. The ruling explains why the three judges rejected the argument and decided to ban Valieva, whose doping case at age 15 stunned the 2022 Beijing Olympics . 

The CAS judges were asked to believe that Valieva's grandfather "accidentally dropped a pill into the dessert while he was preparing it or because there were crushed residues of a (trimetazidine) tablet on the chopping board he used to prepare the dessert." The word "strawberry" is featured 43 times in the document.  

The judges said that there are "too many shortcomings in the evidence, and too many unanswered questions" in that story "for the panel to decide that her account is more likely than not." 

Valieva tested positive for the banned heart medication in a sample given at the Russian championships on Dec. 25, 2021. The test result was not sent from a laboratory in Stockholm, Sweden until six weeks later during the Beijing Olympics.

Valieva had already skated in the team event, helping the Russians win gold, and was allowed to continue competing in the women's individual competition . Under intense scrutiny , her error-filled free skate dropped her to a fourth-place finish .

Athletes who test positive for doping can escape a ban if they later prove they were not at fault for ingesting a substance.

The explanation from Valieva's lawyers during the Olympics was that she was accidentally contaminated by her grandfather's medication at her family's home in Moscow.

More detail was given when the case came to CAS in appeal hearings held in separate sessions last September and November in Lausanne, Switzerland.

It was suggested in court that Valieva's grandfather prepared the strawberry dessert in the days before the national championships for her to take with her to St. Petersburg.

"There is no other evidence — beyond his own assertion — that he can provide as to this claim," the ruling stated. "Nor is there other evidence — beyond his own assertion — that he was using TMZ at the time."

The CAS judges upheld an appeal by the World Anti-Doping Agency which asked for a four-year ban and disqualification of her results after a Russian tribunal cleared Valieva of blame.

The Russian team was stripped of its Olympic title by the International Skating Union, which declared the United States champions . Japan was upgraded from bronze to silver and the Russians were demoted to bronze after Valieva's scores were removed.
